IS your New Year resolution to eat more fruit and veg?

Skip the meat this January and take part in Veganuary. It’s also a great way to boost your health and your bank balance. Here are our top tips . . . 

MEAT-FREE SPAG BOL: If your family loves spag bol, ditch the meat and save.

Instead of Asda Flavourful Lean Beef Steak Mince, (500g), £5.19, head to the freezer aisle for Asda Plant Based Meat-Free Mince, (454g), £2.

For further health benefits add half a pack of red lentils while cooking and this will bulk out the meal.

But for Veganuary, pick up Morrisons Plant Revolution Meat Free Mince (400g) for £2.

Add to your mince a tin of green lentils, 50p, and some chopped mushrooms, £1.50, along with vegetable gravy granules, 73p — all from Morrisons.

Top with mash and bake for a hearty dinner for a lot less than the lamb mince version.

TIKKA TRIUMPH: Whip up a Tikka Masala tonight but, instead of using chicken, make chickpeas the star of your curry.

These will brilliantly soak up all the spice and coconut milk, leaving you with a tasty, filling dinner full of fibre.

Get two tins of chickpeas for 98p at Tesco.

BEAN FEAST CHILLI: A huge meaty chilli is a classic winter warmer, but a three-bean chilli mix with sweetcorn and peppers is just as delicious.

Pick up three tins of the Aldi bean mix, 69p each, and cook with your usual spices and a dash of paprika.

If you have any tins of other beans hanging about, you can use these too.
